Chia Pudding

Coconut and Mango Chia Pudding

  • 2 tbsp Chia seeds
  • 250 ml Coconut milk (one cup)
  • 1/2 tsp Maple syrup
  • 2 tbsp Chopped dried mango (plus a little extra for decoration)
  • 1 tsp Shredded coconut (optional)


  1. In a glass or jar, stir together the seeds, milk, and syrup. Leave for 5 minutes.

  2. Chop the dried mango. I used scissors for this as it seems less fiddly. After the pudding has stood for 5 minutes, add the mango and stir. Make sure the pudding is thick enough to hold the mango pieces. If they sink to the bottom then leave for another five minutes and stir again.

  3. Put in the fridge for two hours or overnight.

  4. Add dried mango and shredded coconut for decoration if you wish. Enjoy!
